Last Sunday I was starting my meal prep (as I do every week) and not really feeling what I had chosen to make. I had already planned and bought all the ingredients. And the recipes were similar to what I had been making for the past months. I couldn’t put my finger on what had changed. Then I realized it’s 77 deg outside during the day, why am I making another stew?!? I’ve had a love affair with the instant pot since November so of course I’ve been making a stew or something in there every week. And it’s been amazing. But the season has changed since November, and in Northern California it’s definitely spring time.
So I rounded up a list of spring inspired meal prep recipes from my favourite bloggers that I plan to make in the coming weeks. I thought I would post it here for your guys incase it inspires any one else’s meal prep.
Any of these recipes listed can be used for any meal. Breakfast salad anyone?!? But I have arranged them for which meal I would prep them for.
I love to prep breakfasts that contain everything I want in one dish. I focus on breakfasts that have a good amount of protein, fat and vegetables. My goal is that breakfast will keep me full till lunch. It also makes my Sunday’s easier to prep everything in one dish.
I’m a salad girl for lunch anyways but spring is my favourite time to enjoy a salad. I like my salads hearty and will often add a hard boiled egg if I don’t think there’s enough protein in the recipe. I bring my dressings to work separately in a small container and add them right before I eat. Lunch is also my most important meal for prepping as I work in an office where the healthy options near by are limited.
Chopped salad with spiced chickpeas | Shutterbean – I would pack this with some halved hard-boiled eggs.
Lamb kababs & carrot salad | Stupid Easy Paleo – I would make the kebabs for dinner on the weekend with roasted veggies. Then have the leftovers with the carrot salad for lunches during the week.
Italian zucchini pasta salad | Inspiralized – Similar to the above, but you spiralize the zucchini into pasta shapes. Going to make this for my lunches this week. Need to keep the dressing separate till serving as zucchini will become super watery if left dressed. I also added some antipasto mushrooms from the olive bar for extra flavour.
Grain free tabbouleh | Stupid Easy Paleo – Perfect with some roasted chicken (I like the pre-made ones in the deli) or hard boiled eggs.
Buffalo Chicken Salad | Stupid Easy Paleo – Extra easy if you use already roasted chicken from the deli
Turkey and bacon lettuce wraps with basil mayo | Iowa Girl Eats – I would keep the mayo on the side for dipping incase it makes the lettuce too soggy. That way you can wrap these ahead of time. I would also skip the avocado as they will brown quickly, and add in some thinly sliced bell peppers for extra crunch.
Dinner is where I have lately been having stew. But now that it’s warm out BBQ or sheet pan dinners with lots of spring veggies seem like an delicious choice!
Wonton meatballs | Nom Nom Paleo – These would be great because you could have them in soup for a twist on the classic or with a simple side salad.
